Turkey & pepperoni pizza stuffed peppers (yep, this counts as real food)

Let’s be honest, pizza cravings don’t disappear just because we’re eating healthier. But what if you could satisfy that craving without the crash, the bloating, or the regret?

These stuffed peppers bring all the pizza flavor you love: melty cheese, seasoned turkey, salty olives, and even pepperoni, just tucked into a crisp bell pepper instead of a crust. It’s comforting, filling, and surprisingly simple to make.

This isn’t about giving up your favorites. It’s about finding new ways to enjoy them on your terms.


Ingredients

  • 2 large green bell peppers (halved, seeds removed)

  • 1 tsp extra virgin olive oil

  • 8 oz extra lean ground turkey

  • Sea salt & black pepper (to taste)

  • ½ cup canned diced tomatoes (with juice)

  • ½ tsp Italian seasoning

  • 1 garlic clove, minced

  • 4 oz shredded mozzarella cheese (divided)

  • 1 oz pepperoni slices (divided)

  • 2 tbsp sliced black olives (divided)


Instructions

  1. Prep the peppers 

    Preheat oven to 375°F (190°C). Place bell pepper halves in a baking dish.

  2. Cook the filling 

    In a skillet over medium heat, cook turkey in olive oil for 5–7 minutes, breaking it up until browned. Season with salt and pepper.

  3. Add flavor 

    Stir in tomatoes, Italian seasoning, and garlic. Simmer for 5 minutes or until most of the liquid is gone.

  4. Mix and fill 

    Remove from heat and stir in most of the cheese, pepperoni, and olives—saving a little of each for topping.

  5. Bake 

    Spoon the mixture into the pepper halves. Top with remaining cheese, pepperoni, and olives. Cover with foil and bake for 15 minutes. Remove foil and bake another 15 minutes until peppers are tender and cheese is golden.

  6. Serve 

    Divide between plates and enjoy warm.


Notes

  • Leftovers: Store in the fridge for up to 3 days or freeze for up to 3 months.

  • Serving size: 2 pepper halves = 1 serving.

  • Dairy-free option: Use your favorite plant-based cheese.

  • Toppings to try: Sautéed mushrooms, fresh basil, or a sprinkle of parmesan.
