2 oz mozzarella cheese, shredded and divided

1/4 cup Parmigiano Reggiano, finely grated and divided

1 lb extra lean ground beef

1/2 medium yellow onion, diced

1 clove garlic, minced

1 egg

1 cup tomato sauce, divided

Sea salt and black pepper, to taste

2 tbsp chopped parsley
Instructions

In a small bowl, combine the ricotta, half of the mozzarella, and half of the Parmigiano Reggiano. Set aside.

Preheat the oven to 400F. Lightly grease a muffin tray.

In a large bowl, combine the ground beef, remaining Parmigiano Reggiano, onion, garlic, egg, half of the tomato sauce, salt, and pepper.

Divide half of the meat mixture evenly among the muffin cups.

Spoon an even layer of the cheese mixture into each cup, then top with the remaining meat mixture.

Bake for 15 to 18 minutes, until cooked through.

Remove from the oven and top each bite with the remaining tomato sauce and mozzarella.
