Recipe Title: Roast Beef Veggie Rollups

Ingredients:

  • 4 oz deli roast beef (thick slices)

  • 1 tsp Dijon mustard

  • ¼ medium red bell pepper, cut into strips

  • ½ small carrot, peeled and cut into strips

  • ¼ medium cucumber, cut into strips


Directions:

  1. Lay the roast beef slices flat on a clean surface.

  2. Spread a thin layer of Dijon mustard on each slice.

  3. Top each slice with a few strips of red pepper, carrot, and cucumber.

  4. Roll each slice up tightly into a roll-up.

  5. Serve immediately and enjoy!


Notes:

  • Leftovers: Best enjoyed fresh, but can be stored in an airtight container in the fridge for up to one day.

  • More flavor: Add a few arugula leaves or a sprinkle of black pepper.

  • Additional toppings: Try serving with pickled onions or jalapeños for an extra kick.
