Ingredients 

  • 4 medium Yellow Potatoes, diced
  • 4 cups Brussels Sprouts, halved
  • 2 tablespoons Avocado Oil
  • Sea Salt & Black Pepper to taste
  • 4 slices Bacon, cut into 1 inch pieces
  • 8 Eggs

Instructions

  1.  Start by preheating your oven to 390ºF (200ºC) and brushing a sheet pan with oil.

  2. Dice the potatoes and halve the Brussels sprouts. Toss them together with avocado oil, sea salt, and pepper.
  3. Next, cut the bacon into 1 inch pieces and mix them in with the vegetables before transferring everything to the sheet pan. Bake this for 30 minutes.
  4. Once the bake time is over, gently toss the vegetables in the pan. Form small 'wells' in the vegetable mix and crack the eggs into them. Put the pan back into the oven for an additional 10 minutes, or longer if you like your eggs more done.
  5. To serve the sheet pan breakfast, use a spatula to lift the eggs and veggies from the pan before dividing between plates. Dig in and enjoy!

Notes:

This sheet pan breakfast recipe is flexible. You can swap in whatever vegetables you have on hand. Zucchini, bell peppers, or spinach all work well at the same temperature and timing.

  • Want to make it ahead? Double the batch and save the leftovers. Reheat in the oven at 350°F for about 10 minutes and the potatoes will crisp right back up.
  • And if you're cooking for one or two, the recipe scales down easily. Use the same pan, same temperature, just fewer of everything.
  • Vegetarian? Omit the bacon. The Brussels sprouts and potatoes still carry all the flavor beautifully.

  • Prefer a runny yolk? Check the eggs at 8 minutes instead of waiting the full 10.
