Ingredients

  • 2 1/4 cups Egg Whites
  • 1/3 cup Oat Milk
  • Sea Salt & Black Pepper (to taste)
  • 2 cups Baby Spinach (chopped)
  • 1/2 cup Sun Dried Tomatoes (drained, chopped)
  • 2 tbsps Chives (chopped)

Instructions:

  1. Preheat the oven to 350ºF (175ºC) and grease or line a muffin tray with parchment paper or use a silicone muffin tray.

  2. In a bowl, whisk together the egg whites, milk, salt, and pepper until well combined.

  3. Divide the spinach and sun-dried tomatoes evenly among the muffin cups, then add the egg mixture. Top with chives.

  4. Bake for 20–25 minutes or until cooked through. Let cool before serving. Enjoy!

Notes:

  • Leftovers can be stored in an airtight container and refrigerated for up to three days. Freeze for up to three months.

  • One serving is three egg white muffins.

  • For more flavor, add chopped fresh herbs, chili flakes, or sautéed mushrooms.
