  • 1/2 cup Sauerkraut (drained)
  • 6 Egg (whisked)

Instructions:

  1. Cook the rice according to the package directions.
  2. Meanwhile, heat a pan over medium heat. Add the sausage and sauerkraut and cook for five to six minutes, breaking the meat up with a spatula until cooked through.
  3. Push the sausage to the side. Add the eggs and scramble for three to four minutes or until just set.
  4. Add the cooked rice and chives. Stir and cook for two to three more minutes until warm through. Divide evenly between plates or bowls and enjoy!
