1 1/4 lbs salmon fillet

1 tbsp extra virgin olive oil

2 tbsps taco seasoning

1 cup corn (cooked)

2 cups purple cabbage (thinly sliced)

1/2 cup cilantro lime dressing (divided)

8 small corn tortillas (warmed)
Instructions

Preheat the oven to 400ºF (205ºC) and line a baking sheet with parchment paper.

Coat the salmon in olive oil and season with taco seasoning. Place on the baking sheet and cook for 12 to 14 minutes, or until cooked through.

While the salmon bakes, combine the corn, cabbage, and half the cilantro lime dressing in a bowl.

Divide the salmon and corn mixture evenly among warmed tortillas. Top with the remaining dressing and enjoy!

Leftovers: Best enjoyed fresh. Store ingredients separately in airtight containers in the fridge for up to 3 days, assembling just before serving.
