Recipe: Slow Cooker Orange Pulled Pork Lettuce Wraps

 A fresh and flavorful slow-cooker recipe perfect for meal prep or crowd-pleasing dinners. Zesty citrus, tender pork, and crisp lettuce come together in a no-fuss, low-carb wrap. 

Ingredients

  • ½ cup Extra Virgin Olive Oil

  • ¾ cup Orange Juice

  • 2 tablespoons Lime Juice

  • 1 cup Cilantro (fresh)

  • ¼ cup Mint Leaves

  • 6 cloves Garlic

  • 2 teaspoons Ground Cumin

  • Sea Salt & Black Pepper (to taste)

  • 4 lbs Boneless Pork Shoulder

  • 10 leaves Romaine Lettuce

  • 3 stalks Green Onion (sliced)


Directions

  1. Blend the marinade 

    Add olive oil, orange juice, lime juice, cilantro, mint, garlic, cumin, salt, and pepper to a food processor. Blend until well combined.

  2. Cook the pork 

    Place pork into the slow cooker and cover with the marinade.

    Cook on low for 6–8 hours, or on high for 4 hours, until the pork is fork-tender.

  3. Shred and serve 

    Use two forks to pull apart the pork. Serve inside romaine lettuce leaves and top with sliced green onions.

Leftovers: 

Store in an airtight container in the fridge for up to 3 days.

Serving Size: 

About 6 oz of pulled pork per wrap.

Flavor Boost (optional): 

Add fresh oregano and orange zest to the marinade.

For deeper flavor, sear pork on all sides before slow cooking.
