Recipe: Slow cooker orange pulled pork lettuce wraps

Servings: 4 to 6 servings (about 10 lettuce wraps total)

 

This one hits that sweet spot when you want dinner to feel bright without doing much work. The citrus keeps the pork fresh instead of heavy, and the herbs pull everything together.

You drop it in the slow cooker, walk away, and later you get tender pork that tastes like you tried harder than you did.

Wrap it in crisp lettuce and you’ve got a light, easy meal that works for busy weeks or meal prep.

Ingredients 

  • 1/2 cup extra virgin olive oil
  • 3/4 cup orange juice
  • 2 tablespoons lime juice
  • 1 cup fresh cilantro
  • 1/4 cup mint leaves
  • 6 cloves garlic
  • 2 teaspoons ground cumin
  • Sea salt and black pepper to taste
  • 4 lbs boneless pork shoulder
  • 10 romaine lettuce leaves
  • 3 stalks green onion, sliced

Instructions

  1. Blend the marinade
    Add olive oil, orange juice, lime juice, cilantro, mint, garlic, cumin, salt, and pepper to a food processor. Blend until well combined.

  2. Cook the pork
    Place pork into the slow cooker and cover with the marinade.
    Cook on low for 6 to 8 hours or on high for 4 hours until the pork is fork tender.

  3. Shred and serve
    Use two forks to pull apart the pork. Serve inside romaine lettuce leaves and top with sliced green onions.

Notes:

Leftovers: Store in an airtight container in the fridge up to 3 days.

Serving size: About 6 oz pulled pork per wrap.

Flavor boost: Add fresh oregano and orange zest. Sear pork on all sides before slow cooking.
