Recipe: Delicious sheet pan pork & vegetable hash

We all love a nourishing dinner that's easy to whip up, doesn't it?

Complicated isn't always better, and this Sheet Pan Pork & Vegetable Hash proves it. An easy, one-pan recipe packed with delicious flavor and nutrients. Perfect for those busy weeknight dinners!

Cook Time: 30 minutes
Servings: 4

Ingredients 

  • 2/3 medium Yellow Onion, chopped
  • 1 1/3 large Red Bell Peppers, chopped
  • 1 1/3 tablespoons Extra Virgin Olive Oil
  • Sea Salt & Black Pepper, to taste
  • 1 1/3 pounds Lean Ground Pork
  • 1/3 cup Parsley, chopped
  • 1 1/3 tablespoons Everything Bagel
  • Seasoning (optional)

Instructions

  1. Preheat your oven to 400°F (205°C) and line a rimmed baking sheet with parchment paper.
  2. Spread sweet potatoes, onion, and bell pepper on the baking sheet. Drizzle with oil and season with salt and pepper, then toss until evenly coated. Ensure the vegetables are spread out in a single layer and bake for 15 minutes.
  3. After removing the baking sheet from the oven, season the pork with salt and pepper, then evenly distribute it over the vegetables.
  4. Put the sheet back into the oven and let it bake for another 15 to 20 minutes, or until everything is thoroughly cooked.
  5. Garnish the sheet pan pork & veggies with parsley and everything bagel seasoning, if desired, then serve.

Leftovers: Refrigerate in an airtight container for up to three days
