- 1 cup Ricotta Cheese
- 1/2 Lemon (medium, juiced and zested)
- 1/3 oz Unbleached All Purpose Flour (for dusting)
- 10 1/2 ozs Puff Pastry (thawed)
- 1 Egg Yolk (whisked)
- 1 tsp Chili Flakes
Instructions
- Preheat your oven to 400ºF and prepare a baking sheet with parchment paper.
- In a pan over medium heat, warm the oil. Add leeks and allow them to sauté for 10 to 12 minutes until soft and slightly browned. Stir occasionally and season with salt and pepper.
- In a food processor, blend the ricotta, lemon juice, zest, salt, and pepper until it reaches a smooth consistency.
- On a lightly floured surface, roll out the puff pastry into a 1/2-inch thick rectangle. Use a knife to trace a 1-inch border around the edges of the pastry, taking care to not cut all the way through.
