Ingredients 

  • 1 1/3 tbsp extra virgin olive oil
  • â…” large yellow onion, chopped
  • 13â…“ oz extra lean ground beef
  • â…“ cup dry jasmine rice, rinsed
  • â…” cup cooked pinto beans, rinsed and drained
  • 2 cups canned diced tomatoes with juice
  • 2 cups chicken broth
  • 2 tsp taco seasoning
  • 5â…“ oz shredded cheddar cheese
  • 2â…” tbsp chopped cilantro

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high. Add onion and sauté 2–3 minutes until softened.
  3. Add ground beef and cook 5–7 minutes, breaking it up until no longer pink.
  4. Stir in rice, pinto beans, diced tomatoes with juice, broth, and taco seasoning.
  5. Cover and simmer 10–12 minutes over medium-low until rice is al dente and most liquid is absorbed.
  6. Sprinkle cheese over the top of the burrito casserole and transfer skillet to the oven. Bake 8–10 minutes or until melted and bubbling.
  7. Cool 10 minutes, top with cilantro, and serve.

Notes:

  • Leftovers: Store in the burrito casserole in an airtight container up to 5 days.

  • Serving size: About 1 cup per serving.

  • Serve it with: Corn tortilla chips, warm corn tortillas, or romaine leaves.

  • Add more flavor: Use shredded chicken or carnitas. Add garlic or jalapeños for heat.
