2 cups canned diced tomatoes (with juice)

2 cups chicken broth

2 tsp taco seasoning

Preheat the oven to 425°F (220°C).

In a large oven-safe skillet, heat the olive oil over medium-high. Add chopped onion and sauté for 2–3 minutes until softened.

Add the ground beef. Cook for 5–7 minutes, breaking it up with a spoon, until no longer pink.

Stir in the rice, pinto beans, diced tomatoes (with juice), broth, and taco seasoning. Cover and simmer over medium-low for 10–12 minutes, stirring occasionally, until the rice is al dente and most of the liquid is absorbed.

Sprinkle the cheese evenly over the top and transfer the skillet to the oven. Bake for 8–10 minutes or until the cheese is melted and bubbling.
