4 medium sweet potatoes

1 tsp extra virgin olive oil

1 lb extra lean ground beef

Sea salt and black pepper, to taste

1 small yellow onion, diced

1/2 cup pizza sauce

1/4 cup water
-
1 tbsp maple syrup
-
2 tbsps coconut aminos
-
1 tbsp hot sauce
-
1 tbsp apple cider vinegar
Instructions:
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Use a fork to poke holes in the sweet potatoes. Place them on the baking sheet and cook for 40 to 45 minutes, or until fork-tender.
- While the potatoes are cooking, heat oil in a pan over medium heat. Add the ground beef and season with salt and pepper.
- Cook the beef for four to five minutes, then add the diced onion, and sauté for another three to four minutes.
- Next, add the pizza sauce, water, maple syrup, coconut aminos, hot sauce, and vinegar. Cook for four to five minutes until the mixture has thickened.
- Finally, remove the cooked potatoes from the oven, slice down the center (but not all the way through), and lightly mash the center with a fork.
- Top each potato with the beef mixture, divide evenly between plates, and enjoy!

Servings: One serving consists of one sweet potato with approximately 3/4 cup of saucy beef.
