Recipe: Delicious Sheet Pan Pork & Vegetable Hash

Ingredients 

 

  • 2 2/3 small Japanese sweet potatoes, peeled and cubed

  • 2/3 medium yellow onion, chopped

  • 1 1/3 large red bell peppers, chopped

  • 1 1/3 tablespoons extra virgin olive oil

  • Sea salt and black pepper, to taste

  • 1 1/3 pounds lean ground pork

  • 1/3 cup parsley, chopped

  • 1 1/3 tablespoons everything bagel seasoning (optional)

 

Instructions

  1. Preheat your oven to 400°F (205°C) and line a rimmed baking sheet with parchment paper.

  2. Spread sweet potatoes, onion, and bell pepper on the baking sheet. Drizzle with oil and season with salt and pepper, then toss until evenly coated. Ensure the vegetables are spread out in a single layer and bake for 15 minutes.

  3. After removing the baking sheet from the oven, season the pork with salt and pepper then evenly distribute it over the vegetables.

  4. Put the sheet back into the oven and let it bake for another 15 to 20 minutes, or until everything is thoroughly cooked.

  5. Garnish pork and vegetable hash with parsley and everything bagel seasoning, if desired, then serve.

Notes:

Leftovers: Refrigerate in an airtight container for up to three days.
