What you'll need
This ingredient list is short, and every item earns its place in this Brussels sprouts Caesar salad. Grab lean ground chicken, fresh Brussels sprouts, radishes for crunch, and pumpkin seeds for texture. Add a whole head of garlic, lemon, Dijon mustard, olive oil, and sea salt and pepper.
Prep Time: 15 minutes
Cook Time: 45 minutes
Servings: 4
Ingredients:
- 1 lb Extra Lean Ground Chicken (cooked)
- 5 cups Brussels Sprouts (halved)
- 1/2 cup Radishes (sliced)
- 1/2 cup Pumpkin Seeds
- 1/3 cup Extra Virgin Olive Oil
- 1 Garlic (whole head)
- 1/2 Lemon (juiced)
- 2 tbsp Dijon Mustard
- Sea Salt & Black Pepper
How to bring it together
The oven does most of the work here. The dressing comes together in a blender while everything roasts.
Instructions:
- Preheat oven to 400ºF. Toss brussels sprouts with olive oil, season with salt and pepper, and arrange on a baking sheet.
- Slice the top off the garlic, expose the cloves, drizzle with olive oil and wrap in foil. Place it on the baking sheet with sprouts and bake for 30 minutes. Continue baking the garlic for an additional 15 minutes after removing the sprouts.
- After cooling the garlic, squeeze out the cloves into a blender, add remaining olive oil, lemon juice, mustard, salt, and pepper and blend into a creamy dressing.
- Toss the Brussels sprouts, radishes and ground chicken with your desired amount of dressing in a mixing bowl.
- Garnish with seeds, sea salt, and pepper before serving.
