Before we get into the details, let’s start with the most important rule. If you see mold, smell something musty or rancid, notice strange clumps from moisture, or find any little critters…

10 baking staples to check during your pantry cleanout

Here’s a look at common baking ingredients and how to know if they’re still good to use. Keep this list handy next time you do a pantry cleanout.

1. Flour (especially whole wheat & gluten-free)

Flour can look perfectly fine but still be a problem if it has been exposed to moisture. Mold can grow, and some molds produce compounds you definitely don’t want in your body.

Toss it if: 

  • It smells sour, musty, or like old crayons.
  • You see any specks of mold or signs of dampness.
  • You have no idea how long it’s been open.

Coach Deb’s Tip: Whole wheat and gluten-free flours spoil faster because they contain more oils. Keep them in an airtight container, and don’t be afraid to store them in the freezer to extend their shelf life.

2. Baking powder

Expired baking powder isn’t usually toxic, but it will lose its power. Using it will leave you with a sad, flat cake instead of a light and fluffy one.

Quick Test: Mix 1 teaspoon of baking powder with a little hot water. If it fizzes up enthusiastically, it’s still good to go. If not, it’s time for a new container.

3. Baking soda

Just like baking powder, baking soda loses its leavening power over time. It won’t make you sick, but it won’t do its job in your recipes, either.

Quick Test: Add a splash of vinegar or lemon juice to ½ teaspoon of baking soda. If it bubbles, it’s still active.

4. Brown sugar

Brown sugar’s biggest sin is turning into a rock-solid clump. This isn’t dangerous, just incredibly annoying. The baking ingredients expiration is less of a concern here than the texture.

Toss it if: 

  • It smells fermented or “off.”

9. Powdered sugar

Rancid signs:
  • A sharp, bitter taste
  • A smell like paint or crayons.
