Broccoli & Chickpea Green Goddess Salad - Nutritious and Delicious!

Our Broccoli & Chickpea Green Goddess Salad is one of those recipes that feel almost too good to be true.

Ingredients

  • 1 1/2 cups Broccoli (cut into florets)
  • 1 cup Chickpeas (cooked)
  • 1 cup Baby Spinach
  • 2 tbsps Almonds (toasted, chopped)
  • 1 1/2 tsps Nutritional Yeast
  • 1 1/2 tsps Ground Flax Seed
  • 2 tbsps Green Goddess Salad Dressing
  • 2 tbsps Cilantro (chopped)
  • Sea Salt & Black Pepper (to taste)

Instructions:

  1. Steam the broccoli in a steamer basket for three to five minutes or until tender-crisp. Set aside to cool.
  2. Mix together the rest of the ingredients in a large salad bowl.
  3. Add the cooled broccoli and toss until well combined. 
  4. Divide evenly between plates and enjoy!

Notes:

Leftovers: Refrigerate in an airtight container for up to two days.

Serving Size: One serving equals two cups of salad.

Additional Toppings: Consider parsley, shallots and/or chives for an extra flavor boost.
