Ingredients:

3 Beets (large, peeled, quartered)

1/3 cup Extra Virgin Olive Oil (divided)

Sea Salt & Black Pepper (to taste)

1 1/2 tsps Dijon Mustard

1 1/2 tsps Raw Honey

2 tablespoons Red Wine Vinegar

8 cups Arugula

1 Navel Orange (peeled, chopped)

1/2 cup Pecans (toasted, chopped)

Instructions:

  1. Preheat the oven to 400ºF, and line a baking sheet with parchment paper.
  2. Toss the beets with 1/3 of the oil, season with salt and pepper, and cook for 35 to 40 minutes on a baking sheet.
  3. In a bowl or jar, mix the remaining oil, mustard, honey, vinegar, salt, and pepper until well combined.
  4. In a large salad bowl, combine arugula, cooked beets, orange, and toasted pecans.
  5. Add the dressing to the salad, toss to combine, and enjoy!

Notes:

Leftovers: Store the salad and dressing separately in the fridge for up to 3 days.

Serving Size: One serving equates to around 3 1/2 cups of salad.

Optional Add-ins: Feel free to enhance your salad with some red onion, crumbled goat cheese, or feta.

Make It Vegan: Substitute the honey with maple syrup.
